Hot Chicken Casserole(On The Light Side)
- 8 oz. chopped cooked chicken
- 1/2 c. chopped bell pepper
- 1/2 can diced canned tomatoes with green chiles
- 3 oz. pasteurized process cheese, chopped
- 1 c. small green peas
- 1/2 c. sliced canned mushrooms
- 1 small onion, chopped
- 1 1/2 tsp. Worcestershire sauce
- 1 c. cooked vermicelli
- Preheat oven to 400u0b0.
- Saute onions and peppers in nonstick skillet sprayed with nonstick spray.
- Add tomatoes and Worcestershire sauce.
- Simmer 4 minutes, until blended.
- Add chopped cheese, stirring until melted.
- Add chicken, mushrooms and peas.
- Add vermicelli to mixture; salt and pepper to taste.
- Pour into casserole dish that has been sprayed with nonstick cooking spray.
- Heat until bubbly.
