Meatless Vegetable Soup Recipe
- 1 lg. can crushed tomatoes
- 1 can Campbell's tomato soup
- 1 tbsp. sugar
- 1/2 pound butter (I use 1 stick butter and 1 stick butter)
- 1 pkg. (40 ounce.) frzn mixed vegetables
- 4 stalks celery, minced
- 2 lg. onions, minced
- 1 tbsp. salt
- Put everything in large kettle and fill to the top with water.
- Bring to boil and simmer for about 30 min, then add in 1/2 c. rice and 1/2 c. washed barley.
- If you prefer noodles add in these instead of rice and barley.
- Cook additional 15 min.
- Add in parsley if desired.
- This also makes good Manhattan Clam Chowder if you add in about 1 dozen clams to some of the soup.
