Mint Chocolate Chip Cheesecake

  1. Combine crumbs and butter and press on bottom of 9-inch springform pan.
  2. Beat cheese until fluffy.
  3. Gradually beat in milk until smooth.
  4. Add eggs, extract and coloring.
  5. Toss 1/2 cup of the chips with flour to coat and stir into cheese mixture.
  6. Pour into crust.
  7. Sprinkle remaining chips on top.
  8. Bake at 300F for 1 hour.
  9. Cool to room temperature and chill thoroughly.
  10. Garnish as desired.
