Fancified Sauerkraut

  1. Heat 1 tablespoon cooking oil in a large soup pot.
  2. Cook bacon until crispy.
  3. Add the onion and apple, cook for 4 minutes.
  4. Add the thyme, caraway seeds, juniper berries, and kraut.
  5. Stir to thoroughly mix.
  6. Add the stock and simmer, covered for 5 minutes.
  7. Add the potatoes and butter.
  8. Stir and cook for 5 more minutes.
  9. Season with salt and pepper.
