Mashed Potatoes with Home-Style Gravy

  1. Cook potatoes in boiling salted water to cover, 20 minutes, or until tender.
  2. Drain; reserve cooking liquid.
  3. Coat nonstick skillet with cooking spray, and warm over medium heat.
  4. Add burger pieces, and cook 5 minutes, or until browned.
  5. Add mushrooms, cover and cook 3 minutes, stirring occasionally.
  6. Mix tahini, tamari and 1 cup water in bowl.
  7. Add to mushroom mixture, and cook 1 minute, or until thickened.
  8. Mash potatoes with 1/3 cup cooking liquid, or more as needed.
  9. Mound potatoes on plates.
  10. Make well in center of each mound, and spoon in gravy.
  11. Serve immediately.
