Fresh Mushroom Relish
- 1 lb fresh mushrooms, sliced
- 1 carrot, peeled and cut into thin, short strips
- 1 cup anaheim chili, peeled, seeded and sliced (measure after slicing)
- 1 cup peeled chopped tomato
- 12 cup coarsely chopped green onion
- 1 cup salad oil (or amount you prefer)
- 12 cup vinegar (or amount you prefer)
- salt
- pepper
- Combine vegetables in a medium bowl.
- Mix in remaining ingredients.
- Marinate in refrigerator for one hour.
