Low-Fat Microwave Lasagna
- 1 lb. turkey Italian sausage
- 1 large (28 to 32 oz.) jar or can spaghetti sauce
- 1/2 c. water
- 1 (15 oz.) carton low-fat of fat-free cottage cheese
- 1 egg, slightly beaten
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 9 lasagna noodles (uncooked)
- 1/2 lb. low-fat Mozzarella cheese, shredded
- 1/2 c. grated low-fat grated Parmesan cheese
- Brown turkey and Italian sausage; drain.
- Stir in spaghetti sauce and water and heat through.
- Meanwhile, combine cottage cheese, egg, salt and pepper.
- Spoon 1/2 cup sauce into 12 x 8-inch baking dish (microwave-safe).
- Alternately layer noodles, egg mixture, Mozzarella cheese and sauce, forming 3 layers.
- Cook, covered, with plastic wrap, on High for 8 minutes and on Medium-low for 35 to 38 minutes or until noodles are tender.
- Let stand, covered, for 15 minutes before serving.
