Hot Spinach Salad
- 1 (10 ounce) bag Baby Spinach (approximate size)
- 12 cup green onion, sliced
- 1 (8 ounce) can water chestnuts, sliced and drained
- 2 ounces monterey jack cheese, shredded (I have used a mild white cheese before-like Brick)
- 3 tablespoons brown sugar
- 13 cup chicken broth
- 3 tablespoons balsamic vinegar
- 2 drops hot sauce
- 1 (8 ounce) can mandarin oranges, drained (approximate size)
- SALAD:.
- Toss spinach, onions, water chestnuts and cheese together in a large bowl.
- DRESSING:.
- Combine brown sugar, chicken broth, vinegar and hot suace in a pan.
- Bring to a boil.
- Remove from heat and stir in oranges.
- Pour over spinach mixture and toss before serving.
