Sly Devil Eggs
- 6 hard-boiled eggs
- 1/4 c. melted butter
- 1/2 tsp. Worcestershire sauce
- 1/4 tsp. dry mustard
- 1 (2 1/2 oz.) can deviled ham
- 3 scallions, minced
- 1/4 c. oleo
- 1/4 c. all-purpose flour
- 2 c. milk
- salt and pepper to taste
- grated cheese (amount as desired)
- English muffins, toasted
- Butter a 9-inch casserole dish.
- Cut eggs in half, remove yolks.
- Mix yolks with melted butter, Worcestershire sauce, mustard, ham and scallions.
- Blend until smooth, stuff the mixture into egg halves.
- Arrange egg halves in the buttered dish.
- Melt remaining butter in saucepan, stirring flour to form a paste, and cook 1 to 2 minutes.
- Blend in milk and season with salt and pepper.
- Heat until thickened, pour sauce over eggs and sprinkle with grated cheese.
- Bake at 350u0b0 in oven 20 to 25 minutes.
- Serve over toasted English muffins.
