Amy's Spanish Rice

  1. In a saucepan, heat oil.
  2. Add onion and garlic.
  3. Saute until translucent.
  4. Add rice and cook until rice gets a little color (very light brown).
  5. Add chicken stock, chopped tomatoes, cans of chilies, chili powder and salt.
  6. Cover and bring to a light boil.
  7. Reduce heat and cook about 15-20 until water is absorbed and rice is soft.
  8. Stir to fluff.
