Inside Out Cucumber Sandwiches
- 1 whole Large Cucumber, Washed Well
- Salt, For Sprinkling On The Cucumbers To Remove Moisture
- 12 whole Rice Crackers
- 2 Tablespoons Light Vegetable-flavored Cream Cheese (store Bought Or See Mine In My Recipe Box)
- Celery Salt
- Peel the cucumber leaving some strips of peel on it (yes, for decor).
- Slice cucumber into 1/2 slices (you should hopefully end up with 24 slices).
- Place slices onto a plate and sprinkle each side lightly with salt.
- Place slices in the refrigerator for 30 minutes (some of the water will seep out of slices).
- Rinse each slice with water, then place onto a paper towel and press to remove excess water.
- Spread 1/2 teaspoon of cream cheese onto each side of a rice cracker.
- Sandwich the cream cheese covered crackers between two slices of cucumber.
- Sprinkle the top of each sandwich lightly with celery salt.
- Serve immediately.
