Inside Out Cucumber Sandwiches

  1. Peel the cucumber leaving some strips of peel on it (yes, for decor).
  2. Slice cucumber into 1/2 slices (you should hopefully end up with 24 slices).
  3. Place slices onto a plate and sprinkle each side lightly with salt.
  4. Place slices in the refrigerator for 30 minutes (some of the water will seep out of slices).
  5. Rinse each slice with water, then place onto a paper towel and press to remove excess water.
  6. Spread 1/2 teaspoon of cream cheese onto each side of a rice cracker.
  7. Sandwich the cream cheese covered crackers between two slices of cucumber.
  8. Sprinkle the top of each sandwich lightly with celery salt.
  9. Serve immediately.
  10. Nutrition Information per 1 sandwich: 20 calories, 1 g fat, 0.5 g protein, 3 g carbohydrates, 0.5 g fiber
