Al's Shrimp And Crab Pasta Salad Recipe
- 8 ounce Penne pasta
- 1/4 c. Extra virgin olive oil
- 2 tsp Balsamic vinegar
- 2 tsp Dijon mustard
- 1/2 tsp Grnd cumin
- 1 tsp Chopped garlic
- 11/2 tsp Salt
- 3 dsh Warm pepper sauce
- 1/2 tsp Curry sauce
- 2 lrg Tomatoes, seeded and minced
- 2/3 c. Minced green bell pepper
- 2/3 c. Minced red bell pepper
- 1 can (5z) sliced water chestnuts, liquid removed
- 1/2 c. Sliced green onions
- 1/2 c. Freshly minced mint
- 1/2 c. Minced red onion
- 4 tsp Orange juice
- 5 ounce Small shrimp, cooked
- 5 ounce Crab meat
- Directions: Cook the pasta using package directions.
- Drain and rinse with cool water; set aside.
- Combine the extra virgin olive oil, vinegar, mustard, cumin, garlic, sugar, salt, pepper sauce and curry sauce in a small bowl.
- Whisk till smooth.
- Mix the tomatoes, bell peppers, water chestnuts, green onions, mint, onion, orange juice, shrimp and crab meat in a large bowl.
- Pour the dressing over the mix, tossing to coat.
- Add in the pasta, tossing well.
- Serve chilled.
