Meatballs with lemon potatoes

  1. Peel and cut potatoes.
  2. Place in a bowl with juice of a lemon and season with oregano, salt and pepper
  3. Place meat in separate large bowl.
  4. Grate onion and tomatoes into mix.
  5. Wet day old bread and squeeze out water, add to mix.
  6. Add fresh parsley and all herbs.
  7. I happen to love oregano and use a lot.
  8. Mix all the ingredients thoroughly.
  9. Form balls with the meat and arrange into a deep pan with the potatoes and the lemon juice it soaked in.
  10. Make sure to add water to the pan and cover with tinfoil.
  11. Bake at 450F for about 75 minutes.
