Balsamic Chicken Recipe
- 4 x Chicken breasts (boned)
- 2 Tbsp. Flour
- 2 Tbsp. Extra virgin olive oil
- 12 ounce Mushrooms, sliced
- 5 x Garlic cloves, crushed
- 1/2 c. Balsamic vinegar
- 1/2 c. Chicken broth
- 1 x Bay leave
- 1/4 tsp Thyme
- 1 Tbsp. Flour (additional)
- 1 Tbsp. Butter Salt and pepper to taste
- Rinse chicken and pat dry.
- Dredge in mix of salt, pepper and 2 Tablespoons flour.
- Brown chicken in oil in skillet on 1 side for 2 to 3 munutes.
- Turn chicken.
- Add in mushrooms and garlic.
- Cook for 3 to 5 min or possibly till chicken is brown.
- Stir in vinegar, broth, bay leaf and thyme.
- Cook, covered, over medium heat for 10 min or possibly till chicken is tender.
- Remove chicken to serving platter.
- Stir in 1 Tablespoons flour and butter.
- Cook for 7 min, stirring constantly.
- Throw away bay leaf.
- Pour over chicken.
- Serve with wild rice and vegtable.
