Crab-Stuffed Chicken Breasts(Serves 8)
- 4 whole medium chicken breasts, skinned and boned
- 3 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 3/4 c. milk
- 3/4 c. chicken broth
- 1/3 c. dry white cooking wine
- 1/4 c. chopped onion
- 1 Tbsp. butter or margarine
- 1 (7 oz.) can crab meat, drained
- 1/2 c. coarsely crumbled crackers
- 1 (4 oz.) can chopped mushrooms, drained
- 2 Tbsp. snipped parsley
- 1/4 tsp. salt
- dash of pepper
- 1 c. shredded Swiss cheese (optional)
- 1/2 tsp. paprika (optional)
- Place chicken (one piece at a time) between plastic wrap and pound with a meat mallet, working from the center out until about 1/8-inch thick.
