Grandma Seem's Lemon Sponge Pie Recipe
- 1 c. sugar
- Dash salt
- 3 Large eggs
- 1 lemon rind, grated
- Pie shell, unbaked
- 4 teaspoon flour
- 2 tbsp. butter, melted
- 5 tbsp. lemon juice
- 1 1/2 c. scalded lowfat milk
- Combine sugar, flour, salt and melted butter.
- Separate 3 Large eggs.
- Beat egg whites till stiff.
- Beat egg yolks and add in 5 Tbsp.
- lemon juice and grated rind of 1 lemon.
- Stir into sugar mix.
- Add in lowfat milk and mix well.
- Mix in beaten egg whites.
- Pour into unbaked pie shell.
- Bake at 325 degrees for 45 min.
