Lighter Egg Salad
- 1 cup of sliced lengthwise napa cabbage
- 2 roma tomatoes, sliced into wedges
- 1 hard-boiled egg
- 1 tablespoon citrus juice or 1 tablespoon choice vinegar
- 2 tablespoons olive oil
- 2 teaspoons honey mustard
- 1 teaspoon soy sauce
- 1 teaspoon honey
- Combine the vegetables.
- chopped the egg.
- Mixed the vegetables and the egg lightly.
- Combine all wet ingredients.
- Stir well.
- Drizzle over the salad and tossed lightly.
