Cherries 'N Cake

  1. Combine 1 cup sugar, flour, salt and baking powder in a large mixing bowl.
  2. Add shortening, milk and vanilla or almond extract. Beat on medium speed for 2 minutes.
  3. Pour into greased 9 x 13-inch baking pan.
  4. Cover batter with drained cherries.
  5. Sprinkle 1 cup of sugar over cherries, then pour 2 cups of hot liquid over cherries. Bake in a preheated 375u0b0 oven (350u0b0 when using glass baking dish) about 40 minutes, covering with foil the last 15 minutes, if necessary, to prevent overbrowning.
  6. Serve warm with whipped cream or vanilla ice cream.
