Carrot-Garlic Mashed Potatoes
- 1 1/2 lb. peeled Yukon Gold potatoes
- 2 clove garlic
- 1/4 c. warm milk
- 2 tbsp. light sour cream
- 2 tbsp. unsalted butter
- 1 tsp. kosher salt
- 1/4 tsp. Freshly ground black pepper
- 1 carrot
- In a large saucepan, boil potatoes for 15 minutes, or until tender.
- Drain and return potatoes to pot.
- Grate garlic into potatoes with a Microplane or fine grater.
- Stir in warm milk, sour cream, unsalted butter, salt, and freshly ground black pepper.
- Mash, adding more milk if necessary.
- Grate carrot and stir into potatoes.
