Carrot-Garlic Mashed Potatoes

  1. In a large saucepan, boil potatoes for 15 minutes, or until tender.
  2. Drain and return potatoes to pot.
  3. Grate garlic into potatoes with a Microplane or fine grater.
  4. Stir in warm milk, sour cream, unsalted butter, salt, and freshly ground black pepper.
  5. Mash, adding more milk if necessary.
  6. Grate carrot and stir into potatoes.
