Magnificent Breakfast Muffins
- 2 c. shredded apples
- 1 1/3 c. sugar
- 1 c. chopped cranberries
- 1 c. shredded carrots
- 1 c. chopped nuts
- 2 1/2 c. flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. ground coriander (optional)
- 2 eggs, beaten
- 1/2 c. oil
- Mix apples and sugar in a large bowl.
- Add cranberries, carrots and nuts; stir gently to combine.
- Mix dry ingredients and add to apple mixture; stir well.
- Stir in eggs and oil.
- Mix gently but thoroughly.
- Divide evenly into greased muffin tins. Makes 12 large muffins.
- Preheat oven to 375u0b0.
- Bake for 25 to 30 minutes or until toothpick tests done.
- Cool in pan for 5 minutes. Remove to wire rack.
