Angel Food Cake And Glazes

  1. Heat oven to 375u0b0.
  2. Mix powdered sugar and flour.
  3. Beat egg whites and cream of tartar in 3-quart bowl on medium speed until foamy.
  4. Beat in granulated sugar on high speed, 1 tablespoon at a time, adding vanilla, almond extract and salt with the last addition of sugar.
  5. Continue beating until stiff and glossy.
  6. Do not underbeat.
  7. Sprinkle sugar-flour mixture, 1/4 cup at a time, over meringue, folding in just until sugar-flour mixture disappears.
  8. Spread batter in ungreased pan.
  9. Cut gently through batter with metal spatula.
  10. Bake until cracks feel dry and top springs back when touched lightly, 30 to 35 minutes.
  11. Invert pan on heatproof funnel; let stand until cake is cold.
  12. Remove from pan.
  13. Spread top of cake with vanilla glaze, if desired.
  14. Makes 8 servings (130 calories per serving).
