Croute Suisse

• 2 tablespoons extra-virgin olive oil
• 1 large slice French bread, crusts removed
• 2 slices emmenthaler cheese (or Gruyere)

1. Preheat broiler.
2. Heat oil in a skillet.
3. Saute both sides of bread.
4. Place on a baking sheet and top with cheese.
5. Place under broiler until cheese melts.
