Spicy Red Lentil Soup
- 1 teaspoon olive oil
- 2 tablespoons chopped garlic
- 1 tablespoon minced ginger
- 2 cups vegetable stock
- 1 cup water
- 1 cup red lentil
- 1 12 tablespoons paprika
- 1 teaspoon cayenne
- 1 tablespoon herbes de provence
- 1 (28 ounce) can whole tomatoes
- saute garlic and ginger in olive oil for about 5 minutes
- add all the other ingredients, hand crushing the tomatoes and using the juice as well.
- i also make sure to hand crush my dried herbs De province for better flavor.
- cook until lentils are tender.
