Apricot Salad
- 1 (29 oz.) can apricots
- 1 large can mandarin oranges
- 2 (3 oz.) pkg. apricot gelatin
- 2 c. hot water
- 2 c. fruit juices
- 1 c. miniature marshmallows
- 1/2 c. sugar
- 3 Tbsp. flour
- 1 egg, beaten
- 2 Tbsp. butter
- 1 c. heavy cream, whipped or 1 pkg. Dream Whip
- 1 large can pineapple (optional)
- grated Parmesan cheese (optional)
- Drain apricots and mandarin oranges (and pineapple).
- Reserve juices.
- Chop apricots.
- Dissolve gelatin in hot water; add 1 cup reserved juice with apricots, oranges and marshmallows.
- Place in 9 x 13-inch dish.
- Chill until firm.
- Blend sugar, flour, egg, butter and remaining 1 cup juice.
- Cook until thickened, stirring constantly.
- Chill.
- Fold in whipped cream.
- Spread over firm gelatin.
- Chill and serve.
- Makes 15 servings.
