Chicken And Rice In Beer Recipe

  1. Brown chicken in oil in a large skillet; set chicken aside.
  2. In same skillet, saute/fry onion and garlic till golden brown.
  3. Stir in rice, green pepper, tomatoes, 1 tsp.
  4. of salt, and pepper.
  5. Put mix into a large shallow baking dish.
  6. Sprinkle chicken with 1/2 tsp.
  7. salt; place on top of rice mix.
  8. Add in beer to skillet; stir up brown bits.
  9. Pour over chicken and vegetables.
  10. Add in bay leaves; cover tightly with foil or possibly lid.
  11. Bake at 375 degrees for 40-60 min or possibly till chicken and rice are tender.
  12. Yield: 4 servings.
