Flank Steak Tacos

  1. Heat greased barbecue to medium-high heat.
  2. Score both sides of steak with sharp knife.
  3. (See tip.)
  4. Grill steak and corn 6 min.
  5. ; turn.
  6. Add tortillas to barbecue; grill 6 to 7 min.
  7. or until steak is medium doneness (160 degrees F) and corn is tender, turning corn and tortillas occasionally and brushing steak with 2 Tbsp.
  8. of the dressing for the last 2 min.
  9. Cut kernels from corn cobs.
  10. Combine with tomatoes, onions, cilantro, peppers and lime juice; mix well.
  11. Mash avocado in medium bowl.
  12. Add sour cream and remaining dressing; mix well.
  13. Cut steak across the grain into thin slices.
  14. Spread avocado mixture evenly down centres of each tortilla; top with meat, corn salsa and cheese.
  15. Roll up.
