Spinach Tortilla Roll-Ups
- 2 (10 oz.) pkg. chopped frozen spinach
- 6 green onions
- 1 c. (8 oz.) mayonnaise
- 1 c. (8 oz.) sour cream
- 1 (.04 oz.) pkg. Hidden Valley dressing
- 2 Tbsp. cilantro, finely chopped (optional)
- 1 Tbsp. parsley, finely chopped
- 1 (3 oz.) can real bacon bits
- 6 to 8 large flour tortillas
- Defrost spinach in advance; put in a colander and squeeze all water out.
- Chop green onions, cilantro and parsley and then mix in bacon bits, mayonnaise, sour cream and dressing mix.
- Tear spinach into pieces and add it; mix well together.
- Lay out a flour tortilla and spread a layer of mixture evenly over the tortilla. Roll it up like a burrito, leaving ends open.
- Cut into bite-size pieces before serving.
- Makes 5 to 7 rolls, depending on thickness of spread.
