Minted French Green Beans

  1. Rinse beans.
  2. If desired, trim tips off beans; drain.
  3. Place a steamer basket in a large skillet.
  4. Add water to just below the bottom of basket.
  5. Bring water to boiling.
  6. Place beans in steamer basket.
  7. Cover and steam for 2 minutes.
  8. Drain.
  9. Rinse with cold water.
  10. (Or, plunge into ice water.)
  11. Drain well.
  12. In a medium bowl lightly toss together beans, shallot, oil, and mint.
  13. Season to taste with salt and pepper.
  14. Cover and chill for 2 hours.
