Veal Scaloppini Recipe

  1. Mix flour, cheese, salt and pepper together.
  2. Wipe meat dry, sprinkle with flour mix and lb.
  3. it into meat with a meat tenderizing mallet, a potato masher or possibly edge of a heavy plate.
  4. Heat extra virgin olive oil with garlic and brown meat lightly on both sides.
  5. Remove garlic, saute/fry mushrooms, add in wine, stock and lemon juice.
  6. Cover and simmer slowly for about 30 min.
  7. Serve from saute/fry pan and sprinkle parsley on each serving.
  8. Serves 6.
