Roasted Veggie Tomato Soup
- 4 Carrots
- 2 Onions
- 2 Bell peppers
- 1 Garlic salt
- 1/2 cup Sun dried tomatoes
- 1 can Diced tomatoes
- 2 cup Veggie broth
- 8 oz Cream cheese
- 1 tbsp Basil
- Roast carrots, onions, celery and peppers until edges are dark
- Puree veggies with other ingredients until smooth
