Chocolate Kahlua Cheesecake
- 1 1/2 c. chocolate cookie crumbs
- 1/3 c. butter, melted
- 1 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 1/2 c. cocoa
- 2 eggs
- 5 Tbsp. Kahlua
- 1/4 c. extra strong coffee
- 1 tsp. vanilla
- 1 c. whipping cream
- 2 Tbsp. sugar
- 1 Tbsp. Kahlua
- 1 small chocolate candy bar, grated
- Preheat oven to 375u0b0.
- Combine cookie crumbs with melted batter; pat gently onto bottom and sides of an 8 or 9-inch pan. In a large bowl, beat cream cheese with sugar and beat until well-blended.
- Stir in 1/2 cup Kahlua, coffee and vanilla.
- Spoon into crust and bake for 25 minutes.
- Cool.
- Chill 6 to 8 hours. Combine whipped cream with sugar and 1 tablespoon Kahlua.
- Spread on filling and garnish with shaved or grated chocolate.
