Dinner In A Pepper
- 8 large green peppers
- 1 lb. ground beef
- 1/2 c. chopped onion
- 3 medium tomatoes, chopped and peeled
- 1 (8 oz.) can whole kernel corn
- 1 (8 oz.) can creamed corn
- 1 tsp. salt
- 3/4 tsp. dried basil
- dash of pepper
- 3/4 c. soft bread crumbs
- 1 Tbsp. melted butter
- Cut tops off green peppers; discard seeds and membranes.
- Chop enough of the tops to make 1/4 cup.
- Boil whole peppers for 5 minutes, drain well.
- Sprinkle inside lightly with salt.
- In skillet, brown beef, onion and the 1/4 cup of green pepper.
- Add tomatoes and cook until tender, about 4 minutes.
- Drain off liquid.
- Add both corns, salt, basil and pepper to skillet.
- Mix well.
- Stuff peppers with the meat mixture.
- Toss crumbs with melted butter, sprinkle on the top of peppers.
- Bake 35 to 40 minutes at 350u0b0.
- Serves 8.
