Potatoes Alfredo

  1. Scrub potatoes and pat dry.
  2. Prick each potato several times with a fork.
  3. Arrange potatoes on a baking sheet; bake at 400F for 1 hour or until done.
  4. Let cool slightly.
  5. Slice each potato in half lengthwise; carefully scoop out pulp, leaving shells intact.
  6. Mash pulp; add butter and half and half and stir well.
  7. Add 1/2 cup of Parmesan cheese and stir until smooth.
  8. Stuff shells with potato mixture and place on a baking sheet.
  9. Sprinkle potatoes evenly with remaining 1/4 cup cheese.
  10. Broil 3 inches from the heat for 3 minutes or until lightly browned.
  11. Sprinkle with parsley.
