Rigatoni Casserole
- 8 oz. lean ground beef
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1 (15 1/2 oz.) jar sauce
- 1/8 tsp. pepper
- 1 (15 oz.) container Ricotta cheese
- 1 c. shredded Mozzarella cheese
- 2 Tbsp. grated Parmesan cheese
- 1 lb. rigatoni
- milk
- salt to taste
- On medium-high heat, saute beef, onion and garlic 4 minutes or until beef is browned.
- Stir in spaghetti sauce and pepper. Reduce heat; simmer 10 minutes.
- In bowl, combine Ricotta, milk and salt.
- Add rigatoni; toss to coat well.
- Spoon 1/2 the rigatoni mixture into an 8 x 8 x 2-inch baking dish.
- Top with 1/2 the Mozzarella and 1/2 the sauce.
- Repeat.
- Sprinkle with Parmesan cheese.
- Bake at 350u0b0 for 20 minutes.
