Spinach Ricotta Quiche
- 10 oz. pkg. frozen spinach, thawed and well drained
- 1 Tbsp. butter
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1/2 tsp. basil
- 1 deep dish pie shell, unbaked
- 1 lb. ricotta cheese
- 3 eggs, beaten
- 1 small onion, diced
- 3 Tbsp. flour
- 1/2 c. sharp cheddar cheese, grated
- Dash of paprika
- 1 c. sour cream
- 1/2 c. sharp cheddar cheese, grated
- Saute chopped spinach in butter, black pepper, salt, and basil.
- Set aside.tix spinach with all remaining ingredients except sour cream and paprika.
- Blend well.
- Pour into pie shell. Spread sour cream to edge of crust and sprinkle with paprika. Bake at 350u0b0 40 to 45 minutes. Serve hot.
