In 10 minutes! Simmer Fish Like a Pro ! -Flounder-
- 4 fillets Flounder (or any other fish of your choice)
- 300 ml Water
- 3 tbsp each Sugar, sake, mirin, soy sauce
- 1/2 tsp Hon-Dashi dashi stock powder
- In a frying pan, combine all of the ingredients except the fish.
- Bring to a boil, then add the fish of your choice.
- When it comes to a boil, cover with a small lid that fits right on top of the fish (a drop lid or otoshi-buta) and simmer for 7-9 minutes and it's ready.
- The heat is about this strong.
- It's almost on high heat.
- Go as high as you can without making it boil over.
- As shown on the photo, make a hole in the center of an aluminum foil to release the steam and simmer.
- Do not touch the fish.
- After about 8 minutes, the sauce has boiled down to 1/3 and it's ready!
- It's very quick!
- Make sure you don't simmer for too long!
