In 10 minutes! Simmer Fish Like a Pro ! -Flounder-

  1. In a frying pan, combine all of the ingredients except the fish.
  2. Bring to a boil, then add the fish of your choice.
  3. When it comes to a boil, cover with a small lid that fits right on top of the fish (a drop lid or otoshi-buta) and simmer for 7-9 minutes and it's ready.
  4. The heat is about this strong.
  5. It's almost on high heat.
  6. Go as high as you can without making it boil over.
  7. As shown on the photo, make a hole in the center of an aluminum foil to release the steam and simmer.
  8. Do not touch the fish.
  9. After about 8 minutes, the sauce has boiled down to 1/3 and it's ready!
  10. It's very quick!
  11. Make sure you don't simmer for too long!
