Sausage And Herb Stuffing
- 1 lb. Bread (3/4 inch cubes)
- 1 lb. Bulk Sausage
- 1/2 Stick Butter
- 3 Large Celery Stalks, chopped
- 1 Large Onion, diced
- 1 Large Bell Pepper, diced
- 3 tsp. Poultry Seasoning
- 1/4 tsp. Thyme
- 1/4 tsp. Sage
- 3/4 c. Chicken Stock
- 2 Eggs (Beaten)
- 1/2 c. Fresh Parsley
- 1. Preheat oven to 400u0b0.
- Arrange bread onto baking sheet. Bake until light golden brown.
- Cool. 2. Cook sausage in heavy large skillet over medium heat until cooked through, crumbling with fork after about 8 minutes.
- Using slotted spoon transfer sausage to large bowl.
- Add butter to any drippings in same skillet.
- Melt over medium heat. 3. Add celery, onion, bell pepper, poultry seasoning, thyme, and sage to skillet.
- Saute for 10 minutes.
- Add mixture to sausage, then mix in bread.
- Add stock to same skillet, bring to a boil scrapping up any browned bits. 4. Pour over stuffing.
- Season with salt and pepper.
- Add eggs and parsley; toss well.
