Chatahoochee Rice

  1. In a large saucepan, combine rice, water, salt, 1 teaspoon butter, and vinegar.
  2. Cook according to directions on rice package.
  3. Set aside, keeping warm.
  4. Over medium-high heat, melt 1/4 cup butter in a large skillet.
  5. Add carrots, onions, cashews, and peas.
  6. Cover and cook 5 minutes.
  7. Add vegetables to rice and stir to combine.
  8. Serve immediately.
