Kumquat Chutney

  1. Heat oil in small saucepan over medium heat.
  2. Add kumquats and onion, and saute 5 minutes, or until onion is softened.
  3. Stir in sugar and 1/2 cup water, reduce heat to medium low, and simmer 5 to 7 minutes more.
  4. Remove from heat, and stir in vinegar.
  5. Cool, and store in airtight container in refrigerator.
