Black Bean and Corn Salsa
- 1/2 whole Red Onion, Diced
- 3 whole Roma Tomatoes, Chopped
- 2 Tablespoons Fresh Cilantro, Finely Chopped
- 1 Tablespoon Lime Juice
- 1 cup Sweet Corn, Uncooked And Cut Staright Off The Cob
- 1 cup Black Beans, Rinsed And Drained
- 1/4 teaspoons Salt
- 1/4 teaspoons Cumin
- Combine all ingredients in a large bowl and toss to distribute flavors.
- Refrigerate for about 30 minutes to allow flavors to set.
- Serve on top of chicken, with tortilla chips or as a side dish with your favorite meal.
