Bayou Seafood Casserole
- 1 (8 oz.) pkg. cream cheese
- 1 stick oleo
- 1 lb. peeled shrimp
- 1 pt. crab meat
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 ribs celery, chopped
- 1 c. cooked rice
- 2 Tbsp. oleo
- 1 can cream of mushroom soup
- 1 small can mushrooms, drained
- 1 Tbsp. garlic salt
- 1/2 tsp. red pepper
- 1 c. sharp grated cheese
- cracker crumbs
- Melt cream cheese and oleo in top of double boiler.
- Saute shrimp, onion, pepper and celery in 2 tablespoons oleo.
- Add cream cheese and oleo.
- Blend well.
- Add soup, mushrooms, seasonings, crab meat and rice.
- Blend well.
- Place in oiled 2-quart casserole dish and top with Cheddar and cracker crumbs.
- Bake at 350u0b0 for 20 to 30 minutes or until bubbly.
- Freezes well for short time.
