Healthy Shrimp Jambalaya

  1. Melt butter in large skillet and brown onion, green pepper, and garlic until tender.
  2. blend in all remaining ingredients except shrimp and rice.
  3. bring to a boil,then reduce heat and begin to simmer; add shrimp and rice.
  4. simmer for thirty to forty-five minutes, until water has boiled off, shrimp is cooked, and the jambalaya has a paste-like consistency.
  5. You will have to stir this fairly often to keep the rice from burning.
