Carrot-Peppermint Stomach Soother
- 4 carrots, sliced
- 4 cups water
- 1 teaspoon dried peppermint or 1 peppermint tea bag
- In a medium saucepan, combine all of the ingredients and bring to a boil.
- Reduce the heat to medium-low, cover loosely, and simmer until the carrots are very tender, about 15 minutes.
- If you're using a tea bag, discard it now.
- Blend or process the mixture until it is very smooth.
- Sip warm.
- If the weather is damp: Stir in a pinch of ground ginger before blending.
- If the weather is dry: Stir in a teaspoon of lemon juice before blending.
