Mexican Rice
- 1/4 cup canola oil
- 2 each yellow onions, minced King Sooper's 1 lb For $0.99 thru 02/09
- 16 cloves garlic, minced
- 1 qt. long-grain white rice, uncooked
- 2-1/4 qt. vegetable stock
- 1/2 cup tomato paste
- 2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped
- 6 Tbsp. Kraft Golden Italian Dressing
- 1/4 cup lime zest Safeway 3 ct For $1.00 thru 02/09
- 1/4 cup minced fresh cilantro
- Heat oil in large pot on medium heat.
- Add onions and garlic; saute until lightly caramelized.
- Add rice; stir to evenly coat.
- Cook 3 min.
- or until lightly toasted, stirring frequently.
- Add stock, tomato paste and peppers; mix well.
- Bring to boil.
- Reduce heat; cover.
- Simmer 20 min.
- or until liquid is cooked off and rice is tender.
- Remove from heat.
- Stir in dressing, zest and cilantro.
- Fluff occasionally with fork until ready to serve.
