Mexican Rice

  1. Heat oil in large pot on medium heat.
  2. Add onions and garlic; saute until lightly caramelized.
  3. Add rice; stir to evenly coat.
  4. Cook 3 min.
  5. or until lightly toasted, stirring frequently.
  6. Add stock, tomato paste and peppers; mix well.
  7. Bring to boil.
  8. Reduce heat; cover.
  9. Simmer 20 min.
  10. or until liquid is cooked off and rice is tender.
  11. Remove from heat.
  12. Stir in dressing, zest and cilantro.
  13. Fluff occasionally with fork until ready to serve.
