Toasted Barley With Mixed Vegetables

  1. Spray a 12 skillet with cooking spray.
  2. Cook barley in skillet over medium heat 6 to 8 minutes, stirring frequently until barley begins to brown, then stirring constantly until golden brown.
  3. Reduce heat to low, add broth.
  4. Cover and simmer for 40 minutes.
  5. Stir in remaining ingredients except green onions.
  6. Heat to boiling over high heat.
  7. Reduce to low, cover and simmer 20 minutes or until veggies are tender.
  8. Sprinkle with green onions.
  9. I guessed on the prep time.
