Jicama and Fruit Compote
- 1 lb jicama, peeled, sliced, diced small
- 4 lemon slices
- 12 cup granulated sugar
- 2 12 cups water
- 4 inches cinnamon sticks
- 2 apples, peeled (sliced or diced)
- 1 12 cups dried apricots, halved
- In a sauce pan, combine jicama, lemon slices, s7gar, water & cinnamon stick.
- Bring to boil, then lower heat & simmer, uncovered, 5 minutes.
- Add apples & apricots to pan & simmer another 2-4 minutes until apples are tender.
- Romove from heat & chill.
- Discard lemon slices & cinnamon stick before serving.
