Asparagus and Lemon Spelt Berry Salad

  1. Cook spelt berries according to package directions.
  2. Transfer to large bowl, and set aside to cool.
  3. Toss with oil.
  4. Steam asparagus 3 to 4 minutes, or until crisp-tender.
  5. Remove, and plunge into cold water.
  6. Cut into 2-inch pieces, and add to spelt berries.
  7. Stir in preserved lemon, lemon juice, and red onion.
  8. Fold in feta, and season with salt and pepper, if desired.
