Spicy Honey-Kissed Chicken

  1. In a small bowl, stir together the rub ingredients.
  2. Using your fingertips, lightly press the rub all over the chicken.
  3. Cut the chicken into strips about 1/2 inch wide.
  4. In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom.
  5. Cook the chicken for 3 to 5 minutes, or until nearly cooked through, stirring frequently.
  6. Meanwhile, in a small bowl, whisk together the lemon juice, honey, and soy sauce.
  7. Stir the lemon juice mixture into the chicken.
  8. Increase the heat to high and cook for 1 to 2 minutes, or until the chicken is no longer pink in the center.
