Impossible Turkey Pie
- 2 c. cut up turkey or chicken (8 oz.)
- 1 jar (4 1/2 oz.) sliced mushrooms, drained
- 1/2 c. sliced green onions
- 1 c. coarsely shredded Swiss cheese (4 oz.)
- 1/2 tsp. salt
- 3 large eggs
- 3/4 c. buttermilk baking mix
- 1 1/2 c. milk
- Heat oven to 400u0b0.
- Lightly grease a 10-inch pie plate. Sprinkle turkey, then mushrooms, onion, cheese and salt in pie plate.
- Put remaining ingredients in blender or food processor; process 15 seconds until smooth (or beat in a bowl 1 minute with electric mixer).
- Pour evenly over turkey and cheese.
- Bake 30 to 35 minutes until golden brown and knife inserted halfway between center and edge comes out clean.
- Let stand 5 minutes before cutting.
- Refrigerate any leftover pie.
- Serves 8.
