Lamb and Feta Rolls with CucumberMintYogurt Dipping Sauce
- Ground lamb for the ground chicken
- Crumbled feta for the Cheddar cheese
- 1 jalapeno, finely chopped, for the chipotle in adobo sauce
- Avocado dipping sauce
- 1 1/2 cups plain yogurt
- 1/2 seedless cucumber, peeled and grated
- 1/4 medium yellow onion, grated
- 1 garlic clove, finely chopped
- 10 fresh mint leaves, finely chopped
- Prepare the rolls in the same way as described in the master recipe, #299, making the ingredient swaps listed.
- Combine the dipping sauce ingredients in a bowl; serve the cucumbermintyogurt dipping sauce alongside the lamb and feta rolls on a bed of Bibb lettuce.
